I like Medium Best as I like to taste some of the juice.PS. Just wondering as an old friend just came up from South America to see me in the US, wife his South American wife. They told me they always got there Steak well done as it was safer???And they said the Meats in the US are better checked so you don't have to worry about the safety aspect!,TRUE OR UNTRUE???

.Bump as my friend wife who visited from La Paz Bolivia, said the meat is only safe to eat well done.Not sure if it is a family or city thing or an old wise tale???.

I actually kinda hate eating well cooked steak. I dont get why someone would choose it.

This

medium-rare to rare,something in between.

Has to be the right kind of meat / age....

 

If I am not sure about the quality in tenderness (age...) I heat it very hot + short from both sides and let it rest in a pre-heated low-temperatur oven (~75 °C) for some minutes (depends on thick-ness....)

I do not know.

Here in the cooler climate regions we do eat rare too (or raw via 1st class tartare)... 

 

But: they say something like that for traveling in warmer (hot and wet and very hot) countries, where they might have problems to cool deep enough - and at least as well important: evenly!

Depends on the cut and how it's being served. 

 

If its on a salad or on a pasta, medium.  I don't want the juices running into the pasta or dressing.

 

For thicker cuts, like filet mignon, medium rare.  I find most restuarants tend to overcook filet mignon since they want the middle cooked, leaving the outside dry.

 

For t-bone, porterhouse, new york strip, I like it medium with a hot pink center.

 

For waygu (kobe) beef, medium rare.  I've only had it maybe 3-4 times in my life since it's usually $80+ for a 10-12 oz cut but fuck, best steaks I've ever had.

Medium well is my favorite because it is still juicy but not raw.Speaking of steaks, a few friends and I ate at Morton's the other day for the first time. OMG it was so fucking good. The porter house steak was absolutely perfect. Their house Mac and cheese was drool worthy, and the mashed potatoes was like heaven in a bowl. The 640 dollar tab was annoying though...
