I think Inglorious Basterds may fit this definition. We don't get all the major players in the same place at the same time till the climax.

I haven't watched all the classics yet but there was a thriller I watched last year called Executive Decision with Kurt Russell and Steven Seagal that I thought did the slow boil thing really well.

Titanic is a good one, as is Nightcrawler (haven't seen Zodiac).

Not sure if this is "slow boil" but Big Fish is my all time favourite movie, and it is one where you wait fr the climax, and the climax is where the whole movie finally comes together and has the emotional impact. So I would count it as slow boil.
