I believe it refers to the method of frying them but I'm not sure.

That s a big discussion between France and Belgium, who invented the " frites" ? I think it s Belgium though.

Mussel/Fries is typically belgian and north of France though which got common history with Belgium. It has been adopted elsewhere but was invented in Belgium.
